Make Your Own Wedding Cake

Many brides have dreamt of a scrumptious tiered white wedding cake since they were little girls. Unfortunately, the majority of wedding guests aren't crazy about the stiff, somewhat chewy, vanilla cake and icing typical at wedding receptions. Your wedding cake should include all of the ingredients loved by you and your groom. If you plan to bake your own wedding cake its wise to do a trial run. One tier can be made up to 3 months before the wedding to be tested and then stored in greaseproof baking paper and foil in your freezer. If you are happy with your trial tier the others should be made as soon after and put in the freezer. About a month before the wedding the cakes should be removed from the freezer and stored in the refrigerator. Before icing, store the cake uncovered in a cool dry place. The cake can be iced one week before the wedding, covered with tissue paper and placed back in the fridge.
